Meat Probe Care and Testing on Viking Ovens

Which Viking ovens use one
Viking’s service literature for the Designer DSOE301 and DDOE301/305 electric ovens lists a fault for a shorted meat probe input, and the service manual for the VESO5271 wall oven family covers removing the meat probe socket. The use and care guide for the Professional gas self-clean ranges mentions only an ordinary meat thermometer.
Keeping the cable and plug healthy
The cable is the part that fails. Route it so the closing door cannot pinch it, keep it clear of the heating elements, and coil it loosely for storage. Wash the probe by hand with the plug end out of the water, dry it completely, and keep the socket free of grease. Take the probe out before a self-clean cycle, along with every other utensil.
Testing it
Push the probe and a separate instant-read thermometer into the same thick part of a roast and compare. Close agreement means the probe is sound.
A probe that tests fine while cooks still end at odd times points to the socket, its wiring or the oven’s electronics. When it reaches the control, the price sits in the control board or touch panel band.
