Oven Calibration: Checking a Viking Against a Thermometer

Taking the reading
- Put an oven thermometer on the centre rack. The oven’s own display reports its sensor, which is the thing being tested.
- Set 350°F and let the preheat finish.
- Read the thermometer at the top and bottom of each heating cycle for at least three cycles, and average them.
- Repeat at a second setting, such as 425°F.

Where the correction is made
On a knob-controlled oven with a capillary thermostat, the correction is a screw at the thermostat shaft behind the knob, turned in small steps. On an oven with an electronic control, the sensor is a resistance temperature detector with a published resistance chart, and it is metered against that chart first, because no offset cures a drifting sensor.
