Porcelain Oven Interior: What Is Safe on It
For an Edmonds owner it decides which products may go inside a Viking oven at all, because one caustic spray or one sheet of foil can mark the finish for good.

What stays off the enamel
Viking’s use and care guide for its Professional gas self-clean ranges bans ammonia, steel wool pads, abrasive cloths, cleaners and powders, and caustic oven cleaners from the oven’s surfaces. It warns separately that commercial oven cleaners inside a self-cleaning oven can give off hazardous fumes, and that foil and liners can melt or burn during a clean.
What is safe
Wipe up large spills from the floor and sides before a clean, once the oven is cold. The door up to the gasket, the door frame and the first couple of inches inside the frame are cleaned by hand with detergent and hot water, then rinsed and dried, because heat bakes soil there on rather than off. The gasket itself is left alone. Afterwards, cool ash wipes off with a damp cloth. The full list for the day is in before you run self-clean.
When the finish or the cycle goes wrong
Dull patches from the wrong cleaner do not polish out, and chips from knocks are not an owner repair either.

- Can I use a commercial oven cleaner inside my Viking oven?
- No. Viking's guide for its Professional gas self-clean ranges warns that commercial oven cleaners can produce hazardous fumes and damage the porcelain finish, and it rules out ammonia, steel wool and abrasives too. - Why is foil on the oven floor a problem?
- The same Viking guide says not to line the oven with foil or anything else, because such materials can melt or burn during a self-clean and permanently damage the oven. - Can chipped enamel be repaired at home?
